Toasted Fennel Sea Salt with Lemon and Chilis

Wild fennel thrives here on the farm and we harvest the seeds each year. After being lightly crushed and toasted, the seeds are blended with sea salt, fresh lemon zest and crushed red chilis creating warmth and brightness with a hint of licorice. Use it as a finishing salt for any roasted vegetable but especially Brussels sprouts, winter squashes and potatoes. Fantastic on chicken or fish, but also sprinkle some on hot buttered popcorn, pizza or on good olive oil to serve with a crusty loaf for dipping!
